Chef Courtney’s Coconut Bars were a hit for today’s snack! Try this recipe with your family!
1 1/2 cup – all purpose flour
1/2 cup – canola oil
1/2 cup – shredded coconut
1 tsp – baking soda
1/2 tsp – salt
1 1/4 tsp – cinnamon
2 – eggs
2 tsp – vanilla extract
1 1/2 cups- agave
1 tbsp – nutmeg
Preheat oven to 350.
In a medium bowl, combine the flour and oil; blend with a blender until the mixture is in coarse crumbs.
Remove 2 cups of the mixture to another bowl and reserve the rest.
Stir the coconut into the 2 cups of agave mixture. Pat firmly into the greased pan.
Stir the baking soda, salt, nutmeg and cinnamon into the reserved mixture.
Mix in the egg and vanilla extract until well blended. Spread over the crust in the pan.
Bake for 35 to 45 minutes, or until firm.
Allow to cool and enjoy!
