Chef Courtney’s Pumpkin Cake Bars were a hit at snack! Try this recipe with your family this weekend!
1/2 cup- vegetable oil
1 cup- brown sugar
1/2 cup- agave
4- large eggs
1/2 tsp- vanilla extract
1 1/2 cups- pumpkin puree
1 tsp- baking soda
1 tsp- baking powder
1/2 tsp- salt
1 1/2 tbsp- pumpkin pie spice
2 cups- all purpose flour
1/2 cup- sunflower seeds
Preheat oven to 350. Grease and flour a large rimmed half – sheet pan, about 18×13 inches.
Beat the oil, sugar and agave together until well blended. Beat in the eggs, scraping the sides as needed.
Mix in the pumpkin puree and vanilla. Stir the baking soda, baking powder, salt and pumpkin pie spice into the wet ingredients, then stir in flour, beating gently to combine. Stir in the sunflower seeds.
Pour the batter into the prepared pan.
Bake for 20 – 25 minutes and let cool.
