Spinach Cheese Ravioli

Need a way to get your little one to eat or even try Spinach? Try Chef Courtney’s Spinach Cheese Ravioli at home!

Ravioli Dough Ingredients:

2 1/2 cups-all purpose flour

1 cup- boiling water



Measure the flour into a bowl, boil the water. Carefully measure the boiling water and pour into bowl of flour along with 2 beaten eggs. Stir the flour and water with a wooden spoon until the dough forms a ball. Cover the bowl with a towel and let it rest for 10 to 15 minutes. While your dough is resting mix your filling. 

Take resting ball of dough spread on floured table and cut ball in half. Take rolling pin and coat in flour. Roll out both half’s of dough at a time. Roll out until dough is thin but not transparent. Begin to place filler only on one side of dough. Place your filler 2 inches apart from each other. Beat 2 eggs and brush on edges of dough. Fold other side of rolled out dough onto the side with filler, press firmly edges of dough and begin to cut out ravioli. Sit ravioli aside in refrigerator until ready to boil.

Ravioli Filling Ingredients:

2 cups-whole milk ricotta cheese

1 tbsp-chopped garlic

1 tbsp- fresh parsley, finely chopped

1/4 cup-parmesan cheese

1/4 tsp-salt

1/4 tsp-pepper

1/4 cup-shredded mozzarella cheese

1-large egg



Put all ingredients in a small bowl except the egg and mix together. Taste the ricotta mixture and adjust any of the seasonings to your taste. Beat the egg in a small bowl and add it to the ricotta mixture and stir until completely incorporated.

Ravioli Sauce Ingredients:

1/4 cup of flour 1 cup heavy cream 1 clove garlic, crushed

1 1/2 cups freshly grated parmesan cheese

1/4 cup chopped fresh parsley


Melt butter in a medium saucepan over medium low heat. Add cream and simmer for 5 minutes, then add garlic and cheese and whisk quickly, heating through. Stir in parsley

Take one 2lb bag of spinach  chop rough or finely. Heat sauté pan with 1 tablespoon of olive oil crush 2 garlic clove place in pan. Once garlic begins to to cooking place spinach in pan and begin to toss.

Once ravioli is cooked pour Sauce over raviolis and mixed in spinach or just place on top. I prefer mine placed on top.
