Veggie Burgers

Chef Courtney prepared Veggie Burgers for the children’s lunch and they loved it! Try this delicious recipe at home!

Ingredients:

1 tbsp- salt

1 tbsp- cumin

1 tsp- black coarse pepper

1 cup- chopped broccoli

1/2 cup- diced carrots

1/2 cup- diced sweet potatoes

1/2 cup- red potatoes

1/3 cup- chopped kale

1/4 cup- chopped onion

1/4 cup- chopped garlic

1/3 cup- soy sauce

1 cup- bread crumbs

1/4 cup- cornmeal

1/2 cup- black beans

1 cup- chickpeas

 

Directions:

In a medium sauté pan, sauté all chopped and diced products. Add salt, cumin, black pepper and soy sauce. Sauté for 20 minutes on medium heat. Boil beans for 2 hours or until tender.(If using fresh beans, add 1 tbsp of salt to water with beans.) Drain beans.

Combine beans, sautéd veggies, bread crumbs and corn meal. Blend ingredients. After ingredients are combined well, begin to form patties.

Bake at 370 degrees in oven for 20 – 25 minutes or cook in an olive oil coated pan on medium heat for 15 minutes.
